No sugar No dairy Banana & Date Loaf

Bit of a mouthful huh?

It’s hard finding dairy free and refined sugar recipes that don’t contain ingredients I don’t have easily in my store cupboard. Mouths to feed and time is my vanilla essence! Please note that this isn’t going to be a traditionally sweet cake. It’s full of natural date and banana sweetness!

Ingredients

100g dairy free spread
About 5 tbsp of date syrup
2 Eggs
2 or 3 Ripe Bananas (mashed)                             6 Dates chopped finely                                    225g Self Raising Flour
1 tsp. Baking Powder if you have it. I don’t always!
2 tbsp. ‘Milk’ it’s your call here, I use Oat Milk but I don’t see why Soya or Almond wouldn’t work.

Method

Mix all ingredients into a bowl. I do wet first (the bananas actually, so I don’t have to use a separate bowl to mash) then dry so not to over work the gluten in the flour.

Pop the mix in a lined loaf tin and in a pre heated 180 degree oven and check after 60 minutes, as all ovens are different. When your testing skewer comes out clean you are in for a banana date cake dream!
